Recipe:

2 bananas

2 eggs

1/2 cup rolled oats

1/2 tsp baking powder

Pinch of salt

Maple syrup/fruit to serve

Throw everything in a blender and blend!

If a little runny add more oats. 

Fry spoonfuls in your best healthy frying pan and flip as they brown on both sides

Serve with maple syrup and fruit

Banana Pancakes

Healthy, delicious and filling, I have tried and tested these pancakes on every sceptical healthy pancake eater there is (I'm talking kids who say they 'hate' bananas) and haven't found anyone yet who doesn't love them.  

They are so easy to make and they are super versatile. You can..

  • Make the mixture the night before

  • Make the pancakes the night before and store them in the fridge

  • Make them when you have time and freeze them

  • Use them as an afternoon 'snack' 

  • Put them in lunch boxes

  • Add other stuff to them
    (dates, berries, flaxseed - anything you think will work for you - this may also give you the opportunity to throw in things you want your kids to eat (or whoever) without them even knowing they are eating them...sneaky eh?!

Trina's Tip:  

If you have fussy eaters, don't let them see how you make them! I have had kids who hate oats and bananas and have made them anyway and you know what - they didn't even notice it!  This includes my own child who initially refused to eat them because they had bananas in them.  Next time, I told him I made them without bananas and guess what - he ate them all up.  Had I taken the bananas out....course not!!!!
