Easy Peasy Pesto Pasta

My youngest is hard to please when it comes to cooking healthy but he loves this dish.  It's so easy to make and pretty versatile so you can improvise if you don't have exactly the right ingredients.


The smell of fresh basil is just gorgeous and I always love making this! It's simplicity makes it a winner.

Trina's Tip:  

I like to add a handful of corriander which may be a bit wierd but it means my son is getting extra herbs.  I use nutritional yeast if I don't have parmesan and this works really well.  You can also add more olive oil or a little warm water and make a dip with this which is delish.



1 cup of fresh basil

Handful of coriander

3 garlic cloves (chopped)

½ cup of cashews

½ cup of parmesan (optional)*

½ cup of cold pressed olive oil

Salt and Pepper to taste

Pasta of your choice

* Use nutritional yeast instead of parmesan for a vegan version or if you just don't have any.


Put all ingredients in a food processor and blitz. Season according to your taste and add more olive oil if needed. Serve with pasta of your choice.

I prefer to use spelt or kamut pasta. If you are using spaghetti, cut it up with a scissors to make it easier for kids to eat!
